Growing with nature

We believe great wines start in the vineyard. Our vines are farmed organically, without synthetic chemicals or pesticides. Instead, we work with nature. Nurturing living soils and planting cover crops to maintain balance.

This biodiversity keeps the land healthy and allows the vines to express their full potential. By following regenerative farming practices, we create grapes that are full of life and energy,

Harvesting at the right moment

Timing is everything. We harvest early in the season, prioritizing freshness and high acidity over excessive ripeness and sugar. Each grape is handpicked, ensuring only the best fruit makes it to the winery.

This careful selection helps us create wines that are crisp, vibrant, and full of tension. By picking early, we also capture the wild, untamed character of our vineyards.

Wild fermentation

In the cellar, we keep things as natural as possible. We rely on wild, native yeasts present on the grape skins to start fermentation, allowing each wine to develop its unique personality.

No commercial yeasts, no additives, no fining or filtration. Just a slow, spontaneous transformation. This process brings out the raw beauty of the grapes, creating wines that are pure, expressive, and deeply connected to the land.

Let time do the work

Great wine takes time. After fermentation, we let the wines age naturally in a mix of concrete tanks, old barrels or amphorae. No rushing, no unnecessary interventions. Patience is key.

The wines evolve at their own pace, developing layers of complexity, texture, and depth. We taste regularly, listening to what the wine needs, allowing it to tell us when it's ready.

Bottling and waxing

When the wine is ready, we bottle it without filtration, keeping it raw and alive. Each bottle is a direct expression of our vineyards, the season, and the music that inspires us.

To protect and preserve the wine, we seal some of the bottles by hand with wax for an extra layer of care that ensures every sip reflects the pure energy of our land. This final step is both functional and symbolic, sealing in the story of the vintage, ready to be shared and enjoyed.
